In Louisiana, must have beignets!

We are at Fontainebleau state park, which is located in Mandeville, just across lake Pontchartrain from New Orleans.  (Fun fact: lake Pontchartrain is a saltwater lake – though classified as a lake, it is technically an estuary that connects to the Gulf of Mexico).

We were going to drive into New Orleans, mostly to get beignets from “Cafe du Monde”, until we discovered that Mandeville has its own legit Cafe du Monde in Mandeville. Having been in New Orleans several times before, this time, it will only have been a drive-by.

Claudette’s 2 cents:
Other than going out to eat our beignets (which is French for little donut) we mostly stayed put. I took the time to cook enough chili so that we’d have left overs. We don’t eat out much in general, so I like to have meals prepared in advance. Today was one of those days.

I got to catch up on emails, clients, other biz type of work, coloring (I did bring my coloring books) and just relaxing. Bernard worked on making sure that my emails are compliant with the new rules coming out this year.
